Brie and Apple Stuffed French Toast

Before we begin today’s Recipe Review, I have to inform you, Constant Readers, of a few things…

1)  After yesterday’s post about Cannonballz, Mlt Down’s Signature Grilled Cheese Sandwich of the Month (and if you haven’t read it/tried it, go do so now!), we have officially reached 500 page views!!! Very impressive.  And after only 14 posts, which means that we are averaging a little over 35 views per post.  Pretty good, I’d say.  A well-deserved round of applause!

2) As you may or may not know, I sometimes post pictures of the cheese I review on Instagram and, if the company is on Instagram, tag the company as well.  It seems like this is paying dividends, as it would appear that someone at a certain cheese company must be following us.  A cartoon about our favourite subject was posted to the blog last Saturday and, coincidentally, also showed up on the cheese company’s Instagram page two days later.  Could be coincidence but, if it’s not, how about hooking the Captain up with some free cheese, nameless cheese company?

On to today’s recipe!  It’s a companion, of sorts, to Wednesday’s review of brie.  If you’ll recall from Wednesday’s review, brie was not my favourite.  Since so many of you seem to enjoy it, I was willing to give it another chance and try it in a little different format.

So off I went in search of recipes containing brie.  And that led me to food.com, where I came across the recipe for…
Brie and Apple Stuffed French Toast

I assume that, like me, most people have fond memories of French toast on weekend mornings.  It really was the best to wake up to that wonderful smell and make my way still half-asleep to the kitchen table where mom had put my plate of French toast with syrup and a big, tall glass of milk.

The ingredients

3 large eggs

1 cup milk
1 teaspoon vanilla
½ teaspoon salt
¼ teaspoon cinnamon
⅛ teaspoon nutmeg
your choice of bread
8 ounces of brie cheese, thinly sliced (with the outer rind removed)
1 apple of your choice (I used Granny Smith, which is my favourite apple but kind of expensive these days)
Butter
The directions

In a pie pan or other shallow dish, whisk together the eggs, milk, vanilla, salt, and spices.
Cover one sllice of bread with brie and apple slices.
Place another bread slice on top to form sandwiches; then press them together slightly to seal.
Dip sandwiches in egg mixture for 30 seconds on each side.
Melt some butter in a small frying pan over med-high heat.
Cover and cook each sandwich for 2-3 minutes on each side, or until lightly browned.
Serve hot with syrup


A couple of tips after making this dish:  
Don’t put too much brie and apple in the sandwich.  If you do, it causes the sandwich to fall apart. Sadly, I now know this from personal experience.
While the apples and brie is a nice pairing taste-wise, they’re both white.  So for presentation, there’s a lack of colour.  If you want to add something else to add more colour, feel free.

Overall, I really enjoyed the dish.  If, like me, you’re not a huge fan of brie, this is a good way to incorporate.  And if you do like brie, well then I think this dish will be right up your alley.
